Chocolate Crackle Cookies



I was reading and playing with crackle cookie recipes and came up with the following.

Chocolate Crackle Cookies

1 stick unsalted butter, softened
1 1/2 cups sugar, plus additional 1/3 cup reserved
2 eggs
2 teaspoons vanilla
2 3/4 cups flour
1 package (3.5oz) chocolate instant pudding mix
1/2 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons espresso powder

Cream butter, sugar, eggs and vanilla in your mixer.   Add remaining ingredients, except additional sugar.   Mix well and refrigerate for at least 2 hours covered.

Preheat oven to 375F.  Roll dough into 1 inch balls with your hands.   Roll into the reserved sugar.   Place on a parchment lined baking sheet and bake for 10 minutes or until the tops are cracked.   Do not over bake.

Note: Don't worry if your dough looks crumbly when you are starting to roll it into balls.  It will work out fine.

I have a different chocolate crackle cookie recipe, but I am thinking that Mark really needs to try this one as well...thanks...he eats cookies every day for breakfast (easy portable food as you head out the door to work, right?), so I will make these for next week. So happy you are food blogging again. :-)
